I’m having a blast at SNAP Conference right now, but I’m so excited to pop in today as a group of us celebrate a very special blogging friend, Cathy from Lemon Tree Dwelling, as she gets ready to welcome her new baby girl! Since it’s not possible for everyone to get together in real life, we’re throwing a little virtual baby shower this morning with lots of party-friendly recipes!

Virtual-Baby-ShowerI decided that a shower for a sweet baby girl calls for a treat that’s pink! Cathy and her husband are blessed to be welcoming their fourth daughter…so I’m pretty sure they already know how to embrace pink! Hmmm…it’s almost like Cathy may be building her very own sister-driven blogging empire or something… ;) Seriously, though, I couldn’t be happier for the Trochelman family and I can’t wait to see this little cutie once she arrives!

Strawberry Graham Cheese Ball Bites ~ cute little strawberry cheesecake balls rolled in graham cracker crumbs and skewered with a pretzel | FiveHeartHome.comBut back to the recipe…I’ve always thought that a baby shower (or bridal shower, for that matter) calls for fun-to-eat finger foods that are cute and tasty, and these Strawberry Graham Cheese Ball Bites fit the bill perfectly! If you’ve been hanging around Five Heart Home for awhile now, you may recognize the similarity between these little yummies and one of my most popular recipes ever. That’s right, folks…this recipe was inspired by my Mini Cheese Ball Bites, which are savory little cheese balls stuffed with blue cheese and dried cranberries and rolled in toasted pecans before being skewered with a pretzel stick.

Instead of chopped nuts, I thought it would be tasty to roll them in graham cracker crumbs, à la strawberry cheesecake. And finally, I opted to keep the pretzel stick, partially because I really enjoy a little salty with my sweet (as evidenced here and here), and partially because it looks nice and makes the entire appetizer edible, meaning you don’t have to worry about throwing away toothpicks when you’re done.

Strawberry Graham Cheese Ball Bites ~ cute little strawberry cheesecake balls rolled in graham cracker crumbs and skewered with a pretzel | FiveHeartHome.comAs much as I love the graham cracker coating, I wanted to experiment a little and see if these would be good with a chocolate accent as well…so I took a few cheese balls and rolled them in mini chocolate chips. Wow. It’s hard to beat strawberry cheesecake plus graham cracker, but if anything can do it, it might just be strawberry cheesecake plus chocolate!

It’s up to you to decide which version you prefer to try. Both variations taste really, really good. Just keep in mind that the chocolate chips end up being heavier, so if your cheese balls sit out too long and soften too much before eating them, the pretzel may come right out when someone goes to pick it up. But even if that happens, I’m sure your party guest will press on, pick it up, and eat it anyway. ;)

Just wait until right before serving to add the pretzels, or else they’ll become soggy sitting in the refrigerator. And as I alluded to above, don’t set these out until you’re ready to serve them. They will become increasingly softer at room temperature which simply makes them a little harder to pick up as time goes on, but they’ll still taste great!

Strawberry Graham Cheese Ball Bites

Yield: Approximately 2 dozen cheese balls

Strawberry Graham Cheese Ball Bites

Mini cheese balls taste like strawberry cheesecake in these cute little bites that are rolled in graham cracker crumbs and speared with pretzel sticks...perfect for serving up at your next party!

Ingredients

  • 8 ounces cream cheese, softened
  • 1/4 cup butter, softened
  • 1 teaspoon vanilla
  • 1 tablespoon strawberry preserves or jam
  • 1 cup powdered sugar
  • 3/4 cup finely chopped strawberries
  • 1/2 cup crushed graham crackers (about 4-5 graham crackers)
  • Pretzel sticks

Directions

  1. Mix together cream cheese, butter, vanilla, and strawberry preserves. Beat in powdered sugar until smooth. Blend in chopped strawberries until well incorporated. Cover and chill cream cheese mixture until firm, at least 4 hours.
  2. Pour crushed graham crackers in a bowl. Use a mini cookie scoop or spoon to roll cream cheese into tablespoon-sized balls. Dip and roll each cheese ball in graham cracker crumbs until well coated. Refrigerate until firm, 4 hours to overnight. Just before serving, skewer each cheese ball with a pretzel stick. Serve chilled.
  3. TIPS, TRICKS, & VARIATIONS: If you would like to roll the cheese balls in mini chocolate chips instead of graham cracker crumbs, you will probably need 1 1/2 to 2 cups of mini chips.

  12. LOVE these! Also, so much easier to roll in graham crumbs or chocolate chips, rather than dipping in melted chocolate. I’ve tried truffles like those and I have zero patience with them :) Pinning these to try!

These look so easy and am going to make them for my daughter’s Bridal Sprinkle (a small shower without the obligation of presents to celebrate the upcoming nuptials) Would Kraft strawberry cream cheese work and add the other ingredients to pump up the strawberry flavor or would that be too soft? Thanks for the recipe! Also how far in advance can I make them… a few days??

      Hi Maggie! Congratulations on your daughter’s upcoming wedding! I think these would be a perfect dessert to serve at a bridal sprinkle. It’s been awhile since I bought a tub of strawberry cream cheese, but as long as it’s not overly soft, it should work fine for this recipe. You can always blend your ingredients together at room temperature and then chill for a bit before forming into balls, so that they hold their shape a little better. (However, if the strawberry cream cheese you’re referring to is significantly softer than a package of regular cream cheese, you might be better off sticking to the original recipe.) You can make the cream cheese balls up to a few days ahead of time — just keep them tightly covered in the refrigerator — but don’t insert the pretzel sticks until right before serving or you’ll end up with soggy pretzels! Hope that helps! Enjoy your daughter’s wedding preparations and congrats again to your family! Happy Friday! :)

          You’re so welcome, Maggie! I’m not entirely positive if the crumbs will stick as well after the cream cheese balls have been refrigerated overnight? Maybe you could slightly moisten them if necessary before rolling in the crumbs? Might be something to test out ahead of time, just in case. ;) Good luck, and I hope you have a great weekend as well! :)

            I made this recipe and the flavor is fabulous, however…. they never set up. After 8 hours in the fridge I decided maybe it needed something more, I added additional cream cheese, more powdered sugar and let them chill in fridge another 8 hours. The strawberries were not wet so I don’t know what went wrong… however onward and upward. I made Brownie Brittle and used it as a dip for that. It was a hit…. but I would still like to know what went wrong. (I used full fat cream cheese because I find the light stuff to soft, so that wasn’t the issue either. Suggestions??

            Hi Maggie! I’m so sorry to hear that these never set up for you. :( I’ve never had that issue, so I’m not sure what could have gone wrong. My first guess would have been what you already mentioned…overly-ripe strawberries that ended up releasing too much moisture into the cream cheese, or low-fat/fat-free/off-brand cream cheese that perhaps didn’t have the same consistency as the regular kind. Aside from those possibilities, I’m not sure what could have gone wrong? I’ll keep thinking about it and let you know if I come up with another idea. At the very least, I’m glad that you were able to salvage your cheese balls by turning them into dip…smart thinking! :) Hope you’re having a great week!

  14. I made this last night for a baby shower. I put the mixture in the refrigerator when I got up this morning the mixture did not set up. I used original philly cream cheese. I guess I will just use the mixture as dip. It has a very good flavor; however the consistency is way to soft to form into balls. I even made two batches. I was going to roll one batch in graham crumbs and one batch in chocolate chips. Neither batch set up.

I don’t have the ingredients on hand to make them at the moment, but I will pick everything up the next time I go to the store so that I can experiment a bit and try to replicate what may be going on.
