We interrupt today's regularly-scheduled summer recipe to bring you a glorious dessert treat that can be enjoyed year round! I can assure you that these Snickers Cheesecake Bars are everything you could dream them to be...and so much more. Allow me to paint a picture for you (albeit, using candy bar bliss, as opposed to happy little trees)...

Imagine a crunchy, chocolatey, Oreo crust. Imagine a layer of rich, creamy cheesecake on top. Now imagine that decadent cheesecake is studded with chunks of chewy Snickers candy bars. And finally, to finish off the whole shebang, envision drizzling melted chocolate and gooey caramel all over the top, and then generously sprinkling with salty chopped peanuts. Friends, meet Snickers Cheesecake Bars!

Sound complicated? Nope...these babies are deceptively simple to make. And even better is the fact that this recipe gives you the goodness of cheesecake with plenty of servings, yet without having to fuss with an actual cheesecake. In fact, if the surface of your cheesecake develops a few fissures, no need to worry...you're going to be dousing it in chocolate/caramel/nuts anyway, so ain't nobody gonna see those cracks! 😉

Speaking of the caramel, feel free to use your favorite jarred sauce for this recipe. However, when I realized that I didn't have any on hand, it took mere minutes for me to whip up a pot of my favorite {5-Minute, 5-Ingredient} Caramel Sauce. So easy, so yummy, and dagnabbit if I ended up with leftovers to eat with a spoon find another use for!

Snickers Cheesecake Bars

Snickers Cheesecake Bars start with a crunchy Oreo crust topped with a decadent layer of Snickers-studded cheesecake, which is then drizzled with smooth chocolate and gooey caramel, and sprinkled with salty chopped peanuts!

Ingredients

  • 35 Oreos
  • 6 tablespoons butter, melted & slightly cooled
  • 24 ounces (3, 8-ounce package cream cheese), at room temperature
  • 3 large eggs
  • ¾ cup sugar
  • 1 tablespoon pure vanilla extract
  • 12- ounce package Fun Sized Snickers, chopped (about 20 Snickers, or 2 ¼ cup chopped)
  • ½ cup chocolate chips, milk chocolate or semi-sweet
  • ½ cup caramel sauce, store-bought or homemade
  • ½ cup roasted salted peanuts, chopped

Instructions

  • Adjust rack to center position of oven and preheat to 325°F. Line a 9- by 13-inch baking pan with aluminum foil so that foil overhangs the sides.
  • To make the crust, place Oreos in a large food processor (or blender, although you may have to divide Oreos into a couple of batches). Process until Oreos break up into fine crumbs. Transfer Oreo crumbs to a medium bowl, pour in melted butter, and stir until crumbs are evenly moistened. Dump crumb mixture into prepared pan and press into an even layer on the bottom and slightly up the sides. Bake for 10 minutes; cool on a wire rack while preparing the filling.
  • To make the cheesecake filling, use an electric mixer to beat together the cream cheese, eggs, sugar, and vanilla until smooth and creamy, for 2 to 3 minutes. Stir in the chopped Snickers and pour the mixture into the cooled crust, spreading into an even layer. Bake for 35 to 45 minutes or until the cheesecake is set, puffed up, and has a few light golden spots and edges. Cool on a wire rack for an hour.
  • Melt the chocolate chips by microwaving for 30 seconds, stirring, and repeating until chips are smooth and melted. While chocolate is cooling for a couple of minutes, pour caramel sauce into a plastic sandwich baggie. Squeeze the caramel into a corner of the bag and snip a tiny piece off of that corner. Use baggie as a piping bag to drizzle caramel all over the surface of the cheesecake, horizontally and vertically. In the same way, use another sandwich baggie to drizzle melted chocolate over cheesecake, diagonally in both directions. Sprinkle chopped peanuts over cheesecake and refrigerate for at least 3 hours until set. Use foil to lift cheesecake out of the pan and cut into 24 squares (or just cut cheesecake in the pan and lift out bars individually).

    1. So glad you enjoyed these, Jeanette! I haven't tried freezing this recipe but I don't see why it wouldn't work, since cheesecake generally freezes just fine. I'd wrap in plastic wrap and then foil, and thaw in the fridge before serving. 🙂

        I make this recipe and freeze it all the time. I cut them before hand so I can pull out a piece or 2 for desserts. I do wrap it in foil and slide it in freezer zipper bags. This is an awesome recipe, thank you so much for it. Mary

    1. Hi Linda! I think cooking spray would work fine if that's your preference. The foil just helps lift the whole slab out at once so that you can neatly cut into bars on a flat surface. 🙂
