Creamy Salsa Dip (or Dressing)

Creamy Salsa Dip is light in calories, bursting with flavor, and easy to make with only FOUR simple ingredients -- salsa, Greek yogurt, taco seasoning, and fresh cilantro. And it's also delicious as Creamy Salsa Dressing!

Cinco de Mayo is upon us and summer vacation is almost here. And if those don't sound like two perfect reasons to share this Creamy Salsa Dip recipe today, I don't know what would be!

Living in Texas, my family will be enjoying a spread of Tex-Mex fare and margaritas tonight for our annual at-home dinner fiesta. And then, before we know, summer will have arrived and our regular dinner menu will have flown out the window...at least for a bit.

Ice cream for breakfast? Sure! Pasta salad for lunch? Yum! An assortment of appetizers and dips for dinner? Why not! So I have a feeling this Creamy Salsa dip will be making an appearance at our house from May right on through August... 😉

Ingredients

Would you believe you only need FOUR ingredients to make Creamy Salsa Dip?!

  1. Salsa. You can use homemade salsa or your favorite jarred or refrigerated variety. Keep in mind that the heat level of your salsa -- mild, medium, or hot -- is going to contribute to the spiciness of your final dip.
  2. Greek yogurt. I always keep Greek yogurt in the fridge and decided to use it in this recipe in lieu of sour cream for a healthier twist with extra protein -- you know, since this was a recipe conceived as a potential dinner and all. 😉 But this dip would be equally yummy made with sour cream if that's your preference (or what you already have on hand). Or you could even use half Greek yogurt and half sour cream.
  3. Taco seasoning. Adds an extra zippy kick, balancing out the neutral flavor of the Greek yogurt. You can add more or less, but keep in mind that the flavor is going to intensify after the dip has had time to chill in the fridge for a bit. And again, use homemade taco seasoning if you've already got some whipped up!
  4. Cilantro. I'm on the obsessed-with-cilantro end of the spectrum, so as far as I'm concerned, the more, the better! However, if you're not so enamored with cilantro, feel free to reduce it or leave it out altogether.

Served with chips, this Creamy Salsa Dip is super yummy and addictive.

And served with raw veggies, you don't even have to feel guilty about it!

A Dip that Doubles as a Dressing!

Speaking of veggies, in the opposite way that my Avocado Dressing can be used as a dip (helloooo, taquitos!), this Creamy Salsa Dip can also be enjoyed as Creamy Salsa Dressing!

As a healthy salad topping, its consistency lends itself to drizzling over simple lettuce or taco salad, or you could even stir it into a Mexican-inspired pasta salad!

It's even delicious drizzled over your favorite nachos or tacos!

How to Make Creamy Salsa Dip

It's super quick and easy to whiz together this Creamy Salsa Dip in the blender or food processor. To be honest, it basically makes itself. 🙂

  1. Add all of the ingredients to a blender pitcher or food processor bowl.

  1. Blend or process until smooth and creamy.

  1. Now this step is important: pop your dip in the fridge to allow the flavors to blend/intensify and the consistency to thicken.
  1. And then…get ready to dig in!

Ways to Enjoy It

Creamy Salsa Dressing would be delicious over a salad, to accompany a regular weeknight dinner or your favorite Tex-Mex fare, from tacos to enchiladas.

Creamy Salsa Dip would be great at a barbecue, as a poolside snack, for tailgating, or at year-round parties and get-togethers.

And since it's relatively light and healthy, rumor has it that you can even enjoy it as part of a balanced dinner. 😉

Ingredients

  • 1 cup salsa, mild, medium, or hot
  • ¾ cup Greek yogurt, OR sour cream
  • 2 to 3 teaspoons taco seasoning
  • 1 cup packed cilantro leaves
  • Tortilla chips and/or raw veggies, for serving

Instructions

  • Measure salsa, Greek yogurt, taco seasoning, and cilantro into a blender or food processor. Blend/process on high until smooth, creamy, and well-combined. Transfer to a bowl, cover, and refrigerate for at least four hours to allow the flavors to blend and the dip to slightly thicken.
  • Serve as a dip with tortilla chips and/or raw veggies, a dressing over salads, or drizzle over Mexican entrees such as quesadillas, tacos, enchiladas, nachos, etc.

  • Recipe can be easily doubled.
  • Creamy Salsa Dip will slightly thicken after several hours of chilling, but it is not intended to be an overly thick dip.
