Almost everything I bake is vegan. With the arrival of summer, I wanted to create a vegan ice cream treat. Thus, these bars were born! This “ice cream” is made from the magical frozen banana. Are you familiar with how versatile frozen bananas are? They make the best smoothies, ice creams and are delicious dipped in chocolate, too!

For these bars, you just need to make a cookie crust, blend the bananas with the other ingredients, and pour on top of cooled crust. Then patiently wait until it sets! This will be a great treat for hot days and I hope you do get a chance to try it. Chocolate Peanut Butter Ice Cream Bars

Yield: 16 bars

Chocolate Peanut Butter Ice Cream Bars

Chocolate Peanut Butter Ice Cream Bars are vegan summer treats made with a chocolate cookie crust and a frozen banana filling!

Ingredients

  • 10 ounces chocolate cookies
  • 3 tablespoons sugar
  • 4 tablespoons canola oil
  • 1 tablespoon unsweetened cashew milk (OR your favorite non-dairy milk)
  • 3 frozen bananas (ideally cut into fourths before freezing)
  • 3 cups unsweetened cashew milk (OR your favorite non-dairy milk)
  • 3 tablespoons brown sugar
  • 5 tablespoons unsweetened cocoa powder
  • 9 tablespoons peanut butter

Instructions

  1. Preheat oven to 350°F. Coat a 9- by 13-inch pan with cooking spray.
  2. In a food processor, pulse chocolate cookies until they resemble small crumbs. Add sugar and canola oil, then add 1 tablespoon cashew milk and pulse until combined. Press mixture into prepared pan. Bake for 10 minutes. Allow to cool completely.
  3. In a blender, combine frozen bananas, 3 cups cashew milk, brown sugar, cocoa powder, and peanut butter; blend. Scrape down sides and blend again until completely smooth. Pour into prepared pie crust.
  4. Freeze pan until bars are set, at least 8 hours. Thaw 30 minutes or until soft enough to slice. Serve immediately.

These are amazing, Megan! I’ve made frozen banana “ice cream” before…but I’ve never thought to turn it into a filling for ice cream bars. Brilliant!
