With just four ingredients, Peach Buttermilk Popsicles are fruity, creamy, frozen treats, kissed with honey and balanced with a touch of buttermilk tang!
Last week, my hubby and I were lucky enough to enjoy a long weekend get-away to Vail, sans kids. He was already in Denver for work, so I flew up on Saturday and we spent the next few days enjoying fresh mountain air and perfect — I mean perfect — weather. What’s funny is that the majority of the other tourists that we saw or spoke to there were from Texas — ha. Sorry, Colorado residents, but our state is miserable right now, so can you really blame us for escaping to yours? 😉
So when our wonderful trip came to an end earlier this week, we were excited to see our kiddos but not exactly looking forward to the 100°F+ temperatures awaiting us at home. But before I left for Vail, I’d stocked the freezer with Peach Buttermilk Popsicles, and I was hopeful that there was at least one left waiting for me upon my re-entry to the Texas heat.
Alas, that wasn’t the case…the stinkers who’d been manning the homefront polished off all of the popsicles! On the plus side, there were still a few peaches in the fridge so, lo and behold, I had a new batch of fruity frozen treats whipped up in no time!
That’s the thing about homemade popsicles…they’re a cinch to make and I don’t feel the least bit of guilt letting my kids enjoy them at snack time, or heck, even for breakfast. The kids feel like they’re getting away with something and essentially eating ice cream, but I know the truth…there’s good stuff in there, baby!
I typically include regular or Greek yogurt in my popsicles, but for these Peach Buttermilk Popsicles, I was inspired to change things up a bit by borrowing an idea from one of my favorite frozen dessert recipes…Blueberry Buttermilk Sherbet. I’ve been making it for years and always love the way the sweet berries are balanced out by the tang from the buttermilk. So I thought to myself, if it works in sherbet, why not popsicles?!
And sure enough, it worked beautifully. I decided to pair the buttermilk with fresh peaches this time, in one last hurrah to summer before they’re all gone (*sob*). It was as simple as peeling a few ripe, juicy peaches and adding them to the food processor (or blender) with buttermilk, a bit of honey (depending on how sweet the peaches are and how sweet you prefer your ultimate popsicles), and the tiniest splash of pure vanilla extract (use the good stuff, because you’ll taste it since these popsicles aren’t cooked). Purée until smooth, pour into popsicles molds, pop in the freezer, and that’s it! You’re just a few hours away from fruity frozen bliss.
So how are you staying cool this summer? Staying in the A/C, spending time at the pool, ensuring plenty of hydration, or indulging in sweet frozen treats? I highly recommend finding a way to incorporate the latter into your plan…and when you do, these Peach Buttermilk Popsicles are for YOU!
