I adore Samantha and her blog and am so thrilled that she invited me over here to guest post for her today!
With all this summer heat upon us, I thought I’d share these No-Bake Peach Yogurt Parfaits that are super easy to whip up and you won’t even have to turn on your oven.
The hardest part is just gathering the ingredients and layering them. You can even assemble them the night before and chill them in your fridge to enjoy the next morning.
Peaches are one of my favorite summer fruits and I always look forward to whenever they are in season. If you’re looking for a new way to enjoy them, these parfaits make a fun and delicious treat.
The Greek yogurt gets sweetened up with a little bit of honey and then we just start filling the jars with alternating layers of yogurt, diced peaches, and your favorite granola. Feel free to add more or less honey depending on how sweet you like them. The parfaits get topped with a fresh blackberry to mix things up.
These make a healthy and delicious breakfast or a light mid-afternoon snack. All you need is your favorite spoon and get ready to dig in!
Healthy, tasty Peach Yogurt Parfaits are layered with fresh, juicy peaches, honey-sweetened Greek yogurt, and your favorite granola for a lovely summer breakfast or snack!
Ingredients
- 2 medium-sized ripe peaches, peeled, pitted and diced (about 1 cup)
- 3 tablespoons honey, divided
- 1/4 teaspoon ground cinnamon
- 2 cups Greek yogurt (can use plain, vanilla, or low-fat)
- 1/2 cup granola
- 2 fresh blackberries or fruit of your choice (optional)
Instructions
- In a medium bowl, toss the peaches with cinnamon and 1 tablespoons honey, set aside.
- In another small bowl, mix yogurt with the remaining 2 tablespoons honey until combined.
- Using small 8-ounce jars or cups, assemble the parfaits by adding a layer of yogurt (about 1/4 cup) to the bottom of the glass. Next add 3 tablespoons of the peaches on top of the yogurt and then add 2 tablespoons of granola on top of the peaches. Repeat layers filling to the top of the jar. Top the parfaits with a small spoonful of peaches and a sprinkle of granola and any other fruit of your choice.
Notes
Can store covered in the fridge overnight.
