Strawberry Brie Grilled Cheese showcases fresh fruit and creamy cheese in a toasty, melty, savory-sweet sandwich…and you can even add chocolate for an extra-special treat!
Did you know that April is National Grilled Cheese Month? Consequently, all month long, I’ve been drooling on my keyboard as various blogger friends have shared creative grilled cheese masterpieces on their blogs and across their social media accounts.
So last week, when I came across a hunk of Brie in my fridge at the same time that I was trying to decide how to use a newly purchased loaf of French bread, I realized that it wasn’t too late to join the grilled cheese celebration! After all, there are two full days remaining in April. But what to pair with the Brie?
And then, it came to me…fresh fruit! Because what goes better with cheese than fruit? I ultimately decided on strawberries because, not only did they sound like a lovely complement to the Brie, but I also happened to have a carton on hand. 😉 And lucky for my reluctance-to-make-a-trip-to-the-grocery-store, the flavors paired beautifully indeed and this Strawberry Brie Grilled Cheese was born!
After taking pics of the first sandwich, I decided to make another, just in case I could get the oozing cheese to look oozier and the berries to look brighter. But then I spied a bag of chocolate chips in the pantry and stopped in my tracks. Because, welllll…
…if a Strawberry Brie Grilled Cheese is good, a Strawberry Brie Grilled Cheese with Chocolate(!!!) has to be better. Right?
Adding melted chocolate chips to a sandwich might just launch it into the dessert category, but that didn’t stop me from eating it for lunch. Yum.
So whether you decide to stick with Brie + strawberries or add a dose of chocolate for good measure, you still have time to celebrate National Grilled Cheese Month. And after April 30th, you have my permission to enjoy this Strawberry Brie Grilled Cheese all year long. Because practice makes perfect, and we need to get this recipe mastered before 2016’s National Grilled Cheese Month rolls around, no?
