When trying to think of a new game-watching dip recipe a few years ago, I recalled a gooey, cheesy appetizer that we sometimes order at a local Tex-Mex restaurant. Now, y'all know that I'm a queso girl through and through, but we decided to get all wild and crazy one night and order Bean Dip in addition to our usual queso. I was surprised at how yummy it was, although I probably shouldn't have been, since the menu revealed that it was basically beans mixed with queso and what's not to love about any recipe involving queso?!

Anyway, I decided to concoct my own queso/bean homage to that restaurant Bean Dip.

Why Make this Bean Dip?

I decided that I wanted my Bean Dip recipe to meets the following requirements:

  • Quick and easy to make.
  • Uses just a handful of ingredients.
  • Ready in less than 15 minutes.
  • Completely assembled in one pot on the stove-top.

And since I was trying to mimic a recipe that revolved around the addition of queso, I knew I'd need to take the cheese to the next level... 😉

Ingredients

Well, I'm happy to report that my experimentation was a success! Ultimate Bean Dip is an unbelievably easy-to-make, totally tasty recipe. And you only need a handful of ingredients to throw it together!

  • Refried beans. If you've got homemade refried beans, go for it! But it's easy to find canned refried beans these days with real, straightforward ingredients. So I'm all about taking advantage of that shortcut!
  • Cream cheese. Softened. The cream cheese lends the dip a rich, decadent undertone to this bean dip.
  • Salsa. If I'm not making my own homemade salsa, I prefer using the fresh, pureed kind from the produce section. But jarred salsa is fine, too. At any rate, salsa contributes a balance of acidity to such a creamy, decadent dip.
  • Taco Seasoning. This is a quick, easy way to add some spice to this dip! Again, either a homemade blend or store-bought packet (you won't use the whole thing) will work here.
  • Grated cheese. I used Pepper Jack, which lends heat and creaminess to this recipe. But you could opt for less spicy Monterey Jack or even sharp or mild cheddar, if you prefer.
  • Cilantro. This final ingredient adds freshness, flavor, and color. But if you're a cilantro hater, you can leave it out. 😉

How to Make Bean Dip

This recipe is super easy and takes only 10 minutes from start to finish. How easy is it?, you might be asking. Why, allow me to answer...it's as easy as dumping a few ingredients into a pot!

  1. Melt and stir together the beans, cream cheese, and salsa until smooth and creamy.

  1. Mix in your choice of grated cheese until melted.
  2. Stir in a handful of fresh chopped cilantro.

  1. Dig in immediately with tortilla chips aplenty!

I'll often transfer my Bean Dip to a mini crockpot set on WARM to keep it heated through and gooey while everyone enjoys it.

I'm telling you, this stuff is game-watching bliss. It really is as scrumptious as it sounds!

Other Ways to Enjoy It

You know what else this Bean Dip recipe is?

It's a last-minute homemade burrito stuffing when you get home late from after-school activities and didn't have a chance to prep anything for dinner yet. 🙂

You can either make a quick batch of dip (or reheat leftovers), spoon it down warm flour tortillas, and roll into burritos. It may be a bit drippy as a burrito filling, but my kids love it and there are NEVER complaints.

Alternatively, for heartier burritos, you can also brown some ground beef, stir in the Bean Dip, and fill tortillas that way. Or even use leftover chicken!

This recipe is also delicious spooned onto a plate as a side dish to our favorite Mexican food fare.

Ingredients

  • 1 (8-ounce) package cream cheese, at room temperature
  • 2 (16-ounce) cans refried beans
  • ¾ cup salsa, mild, medium, or hot, depending on your preference
  • 1 tablespoon Homemade Taco Seasoning, plus more to taste if desired
  • 8 ounces (2 cups) grated pepper jack cheese, OR Monterrey Jack or sharp cheddar
  • ¼ cup chopped fresh cilantro leaves, plus additional for garnish

Instructions

  • In a medium pot set over medium heat, break up the cream cheese into chunks. Add the refried beans, salsa, and taco seasoning and mix together until well incorporated. Stir occasionally until smooth and heated through, adjusting the heat as necessary to prevent the bottom from burning.
  • Stir in the grated cheese until melted, and then add the cilantro. Garnish with additional cilantro, if desired, and serve warm with tortilla chips.

Notes

  • I made this dip with medium salsa and pepper jack cheese and it was moderately spicy, but not so hot that my kids couldn't eat it. If you prefer a milder dip, you may use mild salsa and/or substitute your favorite non-spicy grated cheese.
  • I didn't want my dip to have an overt taste of tacos, but I wanted it to be adequately seasoned. I recommend starting with 1 tablespoon of taco seasoning, and if you think more is needed, add an additional teaspoon at a time. I ended up using a total 1 ½ tablespoons taco seasoning in my dip. You can also supplement the taco seasoning with some plain salt and pepper, if you wish.
  • You may add more salsa for a thinner dip, but keep in mind that adding a lot more will change the flavor.
  • To keep warm while serving, you may transfer the dip to a small slow cooker set to WARM, stirring occasionally to prevent the bottom from burning and the surface of the dip from drying out.

    Hi, I have made your bean dip two years in a row for your game watch dinner, and its always delicious! I was wondering if you have ideas on how to repurpose leftover dip? What other dishes could I use the dip in? thanks!

    1. Great question, Fernanda! I've used our leftover bean dip to make beef & bean burritos before. Brown some ground beef and mix in taco seasoning. Then spread some reheated bean dip on a warm flour tortilla, top with beef and cheese, fold and roll, and serve with lettuce/tomatoes/guacamole/salsa/sour cream on the side. Hope that helps! 🙂

      Nacho night. Use flour tortillas and cut into triangles. top with bean dip, taco meat, cheese and black olives. heat in the oven long enough for the tortillas to get crisp - 10 to 15 minutes on 365 degrees F. top each with a slice or two of jalapenos!
