Strawberry Brie Grilled Cheese {with or without chocolate}

  • 1 tbsp Butter softened
  • 2 slices French bread or your favorite crusty bread, sliced
  • 3 ounces Brie thinly sliced
  • 3 Fresh strawberries washed, dried, & sliced
  • 2 tbsp Mini chocolate chips optional


  • Butter two slices of French toast (on one side each). Assemble sandwich by covering first slice of bread (butter side down) with slices of Brie. Top with sliced strawberries, covering the cheese to the edges. Sprinkle generously with chocolate chips, if using. Top with another layer of Brie and second slice of French bread (butter side up).
  • Heat a skillet over medium-low heat. Transfer sandwich to skillet and cook for a few minutes until bottom is golden brown and cheese is starting to melt. Press down on sandwich to prevent the filling from falling out and carefully flip over. Cook until second side is golden brown and cheese is fully melted. Serve immediately.


Amounts of ingredients used will vary based on the size of your bread, but each of my sandwiches required about 1 tablespoon of butter, 3 ounces of Brie, 3 strawberries, and a couple tablespoons of mini chocolate chips.
