Servings 1jar of Waffle Mix yields 4 batches of waffles; 1 batch of waffles makes approximately 5 large round waffles (slightly more or less, depending on size/shape of waffle maker)
In a large bowl, whisk together whole wheat pastry flour, cornmeal, baking soda, and salt until very well combined. Store in an airtight container.
To Use Waffle Mix:
Preheat waffle iron. Measure 2 ½ cups Whole Wheat Waffle Mix into a large bowl. Stir in buttermilk and eggs and mix until just combined. Stir in melted butter and vanilla until all ingredients are incorporated, but do not over-mix (a few lumps are fine).
Cook the waffles according to your waffle iron's directions. Serve waffles immediately or keep warm by placing directly on the oven rack (in a single layer) in an oven that's been heated to 200°F and then turned off.
Notes
If you don't have any buttermilk on hand, you can make your own by pouring 2 tablespoons of lemon juice (or white vinegar) into a 2-cup liquid measuring cup. Fill the remainder of the measuring cup (up to the 1 ¾-cup line) with milk (whole milk is preferred but low-fat/skim milk will work). Stir and allow to sit for 10 minutes before proceeding with recipe.
For extra-fluffy waffles, you may add the egg yolks to the batter while separately beating the egg whites into soft peaks. As a last step to making the waffle batter (after all other ingredients have been incorporated), carefully fold the beaten egg whites into the batter.
NUTRITION CALCULATIONS are for one-fourth (one section) of one of the large round waffles pictured in this post, made as directed for a batch of waffles. The calculations are estimates, as your waffle maker may yield waffles of a different shape and size.
***If you would like to test this recipe (to make sure you like the waffles before making a quadruple-batch of Waffle Mix!), a single batch of dry ingredients would call for: 2 ¼ cups whole wheat pastry flour, 2 tablespoons cornmeal, ¾ teaspoon baking soda, and ¾ teaspoon salt.***
