Approximately 3 cups pimento cheeseor another thick vegetable dip
Sturdy crackers and raw veggiessuch as pepper strips, celery, carrots, etc., for dipping
Cut the top off of each pepper and scrape/scoop out the seeds and membranes. If a pepper isn't sitting flat, slice a very thin piece off of the bottom of the pepper to level it.
Use a gel pen to draw a jack-o'-lantern face on each pepper, and use a sharp, pointy paring knife to slowly and carefully carve each face.
Just before serving, carefully spoon about 1 cup of pimento cheese into each pepper, taking care not to press down on the dip too much (or it may ooze out of the openings). Gently set the top on each pepper and surround with the "jack-o'-lanterns" with dippers.
