Parmesan Panko Crusted Chicken

Parmesan Panko Crusted Baked Chicken  |  {Five Heart Home}When I pick up my first grader from school every afternoon, the first thing out of his mouth is not, “Hi, Mama,” or “I’m delighted to see you, young siblings.” It’s “What are we having for dinner?” And to be perfectly honest, it’s a question that sets my teeth on edge a little bit because there’s about a 50% chance on any given day that my answer is going to be met with whining and moaning. Granted, this is coming from the kid that likes and eats just about everything, but at the end of a long, hard school day, he’s not very receptive to the idea of a new recipe with unbeknownst-to-him ingredients or (gasp!) leftovers.

But there are certain dinners that I can relay to him with confidence, knowing that they’re going to be received with cheers instead of grumbles. This cheesy, crunchy, golden chicken is one of them. Yes sirree, when I announce to the 6-year-old that this bad boy is on the menu tonight, the mood is set for a joyful car ride home.

The other question that I get a lot lately occurs when my boys are circling the kitchen in anticipation of chowing down on something I just cooked. Over the past few months, they have both started asking, “Do you have to take a picture of that before we can eat it?” Sorry, boys. Yes…yes, I do. {Cue groaning.}

But I know you’re hungry tonight, so my bloggy friends will hopefully forgive the fact that the photos to accompany today’s post are rather sparse. You see, dear readers, my family is downright demanding and actually expects to enjoy their food, you know, warm. So Mama took a few speedy pics of this quick-to-make, yummy-to-scarf-down meal and it was time to eat.

Parmesan Panko Crusted Chicken

Yield: 4 servings

Parmesan Panko Crusted Chicken

  • 4 chicken breasts
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream (OR yogurt)
  • 1/4 cup Parmesan cheese
  • 2 tablespoons Panko bread crumbs
  • 1/2 teaspoon garlic salt


  1. Preheat oven to 425°F. Line a baking sheet with foil for easy clean-up.
  2. In a small bowl, mix together mayonnaise and sour cream. In another small bowl, combine Parmesan, bread crumbs, and garlic salt.
  3. Lay chicken breasts on baking sheet. Spread 1/4 mayonnaise mixture on top and down sides of each chicken breast. Sprinkle 1/4 of Parmesan/bread crumb mixture on top of each chicken breast, covering and lightly pressing it into the mayonnaise mixture.
  4. Bake for 20 minutes or until chicken is cooked through, taking care not to overcook.

Tips, Tricks, & Variations

For a dairy-free version, you may use all mayonnaise (in lieu of half sour cream or yogurt).

If you don't have Panko bread crumbs, regular bread crumbs (plain or seasoned) will work perfectly fine. I just like Panko because they're extra crunchy.

This chicken turns out really moist and juicy, as long as you are careful not to overcook it!

  7. I get the same question from my hubby and kids every day and am usually met with moans and whines half the time as well. My answer now is always “food” which drives them crazy.       Hi Samantha! You can definitely substitute anything creamy for the mayonnaise. You can just use all sour cream in this recipe or substitute some plain yogurt for the mayo instead. It will affect the taste a little bit, but if you don’t like mayo, that’s a good thing! 😉
